Vegetable Fluffy Frittata
Equipment
- Frying pan
- Grill
- Cutting board
Ingredients
- 1 tablespoon coconut oil
- 1 bunch of scallions
- 2 bell peppers
- 4 flat mushrooms
- 1 zucchini
- 2 cloves crushed garlic
- Salt and pepper to season
- Handful of spinach
- Oregano dried or fresh
- Smoked paprika
- 6 eggs
- 1/4 cup non-dairy milk
- 1/4 cup cheese of choice goats cheese is yum!
- 1 avocado sliced
Instructions
- Turn on your grill
- Dice all the vegetables
- Heat frying pan on medium high heat.
- Add coconut oil and saute all the veggies for 7 minutes.
- Add the smoked paprika and oregano. Let the spices absorb for 2 minutes.
- Meanwhile, in a large bowl, whisk together eggs and milk with a few cracks of salt and pepper.
- Take the frying pan off the heat and pour the eggy mixture over
- Grate cheese and place in grill.
- Allow at least 10 mins for your eggs to cook and take out when cooked through.
- Enjoy with sliced avocado!
