This is a great dish to make if you have guests. The ingredients are quite diverse, use whatever veggies you have on hand. You can spice it up with a chopped chili and play around with your favorite cheese. Although I adore this with goats cheese, red cheddar and mozzarella also go brilliantly!

Vegetable Fluffy Frittata

This fluffy frittata is brilliant first thing in the morning, filled with so many brilliant nutrients. Substitute veggies for whatever you have in your fridge.

Equipment

  • Frying pan
  • Grill
  • Cutting board

Ingredients
  

  • 1 tablespoon coconut oil
  • 1 bunch of scallions
  • 2 bell peppers
  • 4 flat mushrooms
  • 1 zucchini
  • 2 cloves crushed garlic
  • Salt and pepper to season
  • Handful of spinach
  • Oregano dried or fresh
  • Smoked paprika
  • 6 eggs
  • 1/4 cup non-dairy milk
  • 1/4 cup cheese of choice goats cheese is yum!
  • 1 avocado sliced

Instructions
 

  • Turn on your grill
  • Dice all the vegetables
  • Heat frying pan on medium high heat.
  • Add coconut oil and saute all the veggies for 7 minutes.
  • Add the smoked paprika and oregano. Let the spices absorb for 2 minutes.
  • Meanwhile, in a large bowl, whisk together eggs and milk with a few cracks of salt and pepper.
  • Take the frying pan off the heat and pour the eggy mixture over
  • Grate cheese and place in grill.
  • Allow at least 10 mins for your eggs to cook and take out when cooked through.
  • Enjoy with sliced avocado!
