Refreshing Carrot & Coriander Soup

- Hand blender
Ingredients
- 1 large yellow onion chopped
- 5-6 large carrots sliced
- 1 tbsp olive oil
- 2 cups vegetable stock
- Bunch of coriander or tsp crushed coriander seeds
- ½ tsp salt
- ½ tsp pepper
Instructions
- Heat oil in a saucepan over medium-high heat, add the onion.
- Saute onion until it is translucent, about 5 minutes.
- Add crushed coriander (if using fresh do not add). Saute for 1-2 minutes.
- Add vegetable stock, carrots, salt, and pepper.
- Cover and simmer for 20 minutes.
- If using fresh coriander, add now.
- Blend the soup using a hand blender until consistency desired.
- Serve and season with more salt and pepper.
