Refreshing Carrot & Coriander Soup

Did you know a half cup of carrots can give you up to 73% of your daily requirement of vitamin A AND 9% of your daily vitamin K? This soup is one that my mum has made for me over the years and I still absolutely adore it. The coriander complements the carrot and is rich in immune-boosting antioxidants. Treat yourself to this wholesome soup when you’re sick or to be warmed up on a cold winter day!

Ingredients
  

  • 1 large yellow onion chopped
  • 5-6 large carrots sliced
  • 1 tbsp olive oil
  • 2 cups vegetable stock
  • Bunch of coriander or tsp crushed coriander seeds
  • ½ tsp salt
  • ½ tsp pepper

Instructions
 

  • Heat oil in a saucepan over medium-high heat, add the onion.
  • Saute onion until it is translucent, about 5 minutes.
  • Add crushed coriander (if using fresh do not add). Saute for 1-2 minutes.
  • Add vegetable stock, carrots, salt, and pepper.
  • Cover and simmer for 20 minutes.
  • If using fresh coriander, add now.
  • Blend the soup using a hand blender until consistency desired.
  • Serve and season with more salt and pepper.
