Refreshing Carrot & Coriander Soup
Did you know a half cup of carrots can give you up to 73% of your daily requirement of vitamin A AND 9% of your daily vitamin K? This soup is one that my mum has made for me over the years and I still absolutely adore it. The coriander complements the carrot and is rich in immune-boosting antioxidants.

- 1 large yellow onion chopped
- 5-6 large carrots sliced
- 1 tbsp olive oil
- 2 cups vegetable stock
- Bunch of coriander or tsp crushed coriander seeds
- ½ tsp salt
- ½ tsp pepper
Heat oil in a saucepan over medium-high heat, add the onion.
Saute onion until it is translucent, about 5 minutes.
Add crushed coriander (if using fresh do not add). Saute for 1-2 minutes.
Add vegetable stock, carrots, salt, and pepper.
Cover and simmer for 20 minutes.
If using fresh coriander, add now.
Blend the soup using a hand blender until consistency desired.
Serve and season with more salt and pepper.
