Dairy-Free Seafood Chowder

- Saucepan
- Hand blender
Ingredients
- 1 onion diced
- 2 red-skinned potatoes peeled and cubed
- 1 tbsp olive oil
- 1 carrot optional, sliced
- 2 cups vegetable stock
- 1 pack seafood mix OR fresh fish of choice cubed
Instructions
- Heat oil in a saucepan medium-high heat.
- Saute onion, and potato until browned.
- Add vegetable stock and carrot.
- Bring to a boil and simmer for 15 minutes.
- Blend until no longer lumpy.
- Add seafood mix and simmer for a further 10-15 minutes.
- Serve and season with salt and pepper.
