Avocado Peach Salad with Caramelized Pecans and Goats Cheese

Perfect for summer: this mouth-watering grilled peach salad always goes down a treat with guests. It is sweet and satiating. Perfect for an outdoor BBQ with wine.

INGREDIENT NOTES

Salad – You can use your favourite salad for this recipe. These flavours work well with rocket, romaine and iceberg.

Peaches – if you’re having a bbq, grill the halved peaches outside or simply use your grill inside. Leave them until the end when you’ve finished with the salad so they’re still warm.

Goats Cheese – I adore goat’s cheese with the sweetness from the honey pecans and grilled peaches. However, if you would like to make this dairy-free you can substitute the goat’s cheese for avocado instead.

Yoghurt – I find greek yoghurt works best for this dressing as it’s super creamy. You can opt for unflavoured soy or coconut yoghurt also. Still delicious.

Berries – blueberries complement these flavour so well. However you could instead substitute them for strawberries. Perfect in the summer!

Dressing – the dressing can be either mixed in a blender or shaken in a mason jar.

Step by step instructions

  1. Slice the peaches into thick wedges, in a mixing bowl toss with olive oil.
  2. Place all salad dressing ingredients in a blender and blend for 10 seconds.
  3. Heat butter in a frying pan over low-medium heat. Add honey and continuously stir.
  4. Add pecans, stirring until completely covered and the saucepan is dry.
  5. Grill peaches for 3 minutes on each side.
  6. In a salad bowl, add rocket and blueberries, toss in salad dressing.
  7. Add peaches, crumbled goat cheese, and pecans.

Quick Tips!

– No blender? No problem put all the salad dressing ingredients in a mason jar and shake!

This is an incredible salad to make if you are having guests over. You can substitute the greek yogurt for coconut if you are dairy-free. This salad is also delicious with some sliced avocado!

  • 4 ripe peaches halved
  • 1 tbsp olive oil
  • 150 grams rocket
  • ½ cup blueberries
  • ¼ cup soft goats cheese

  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp balsamic vinegar
  • 2 tbsp greek yogurt

Ingredients for caramelized pecans

  • 1 tsp butter
  • 1 tbsp honey
  • ¼ cup pecans
  • ¼ tsp salt

Instructions
