Grilled Peach, Caramelized Pecans and Blueberry Rocket Salad

This is an incredible salad to make if you are having guests over. You can substitute the greek yogurt for coconut if you are dairy-free. This salad is also delicious with some sliced avocado!

Ingredients
  

Ingredients for salad

  • 4 ripe peaches halved
  • 1 tbsp olive oil
  • 150 grams rocket
  • ½ cup blueberries
  • ¼ cup soft goats cheese

Ingredients for salad dressing

  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp balsamic vinegar
  • 2 tbsp greek yogurt

Ingredients for caramelized pecans

  • 1 tsp butter
  • 1 tbsp honey
  • ¼ cup pecans
  • ¼ tsp salt

Instructions
 

  • Slice the peaches into thick wedges, in a mixing bowl toss with olive oil.
  • Place all salad dressing ingredients in a blender and blend for 10 seconds.
  • Heat butter in a frying pan over low-medium heat. Add honey and continuously stir.
  • Add pecans, stirring until completely covered and the saucepan is dry.
  • Grill peaches for 3 minutes on each side.
  • In a salad bowl, add rocket and blueberries, toss in salad dressing.
  • Add peaches, crumbled goat cheese, and pecans.
