Chocolate Coffee Energy Balls

INGREDIENT NOTES

Oats – You can use whichever oats you have in your pantry. Just remember, if you are using steel cut oats, as they are more dense they will need to be blended a little bit longer to form a coarse flour. 

Raisins – these little sweet dried fruits are full of fiber, vitamins, and minerals. They’re also packed with calories. You can substitute raisins for dates if you’d prefer!

Almond Milk – I love to bake with almond milk as it doesn’t have a strong taste, it’s dairy-free yet still full of calcium! Feel free to use whatever milk you have in the fridge for these energy bites.

Cocoa powder – I always like to bake with unsweetened cocoa powder. Did you know that cocoa powder is rich in phytonutrients but low in fat and sugar. The theobromine contained in it can help protect you from diseases such as diabetes, heart disease and certain cancer!

Desiccated coconut – these are completely optional. But they make the energy bites look even prettier, taste good, and full of healthy fats.

Agave Syrup– agave syrup, honey, rice syrup or maple syrup. Whichever you prefer!! I love baking with agave syrup as it has a lower GI value. And the lower the GI, the less the food raises your blood glucose.

Step by step instructions

  • Soak raisins in milk for 10 minutes.
  • In a blender, blend oats, seeds, coffee, cocoa, and coconut together.
  • Add in the raisins and milk. Blend again.
  • When the batter is at a sticky consistency, using a spatula transfer it to a large mixing bowl.
  • Prepare a baking tray with parchment paper
  • Using a dessert spoon or ice cream scoop, form the mixture into small balls with your hands.
  • Pop in the fridge for 30 minutes.
  • Store in an airtight container in the fridge and consume within a week!
