Easy Peasy Mint Soup
Equipment
- Saucepan
- Hand blender
Ingredients
- 1 large yellow onion chopped
- 1 tbsp olive oil
- 1 garlic clove chopped
- 200 g frozen peas
- 2 cups vegetable stock
- A handful of fresh mint
- Salt & freshly ground pepper
Instructions
- Heat oil in a saucepan over medium-high heat, add onion, and garlic.
- Add vegetable stock, peas, salt, and pepper.
- Bring to a boil and simmer for 10 minutes.
- Blend the soup until consistency desired.
- Add mint.
- Serve and season with salt and pepper.
