Easy Peasy Mint Soup
I am obsessed with this soup! Peas can be a brilliant source of vitamins C and E, zinc, and many other antioxidants that can strengthen your immune system! Fresh mint also has an array of health benefits which range from improving brain function and digestive symptoms to relieving breastfeeding pain, cold symptoms, and even bad breath!

- 1 large yellow onion chopped
- 1 tbsp olive oil
- 1 garlic clove chopped
- 200 g frozen peas
- 2 cups vegetable stock
- A handful of fresh mint
- Salt & freshly ground pepper
Heat oil in a saucepan over medium-high heat, add onion, and garlic.
Add vegetable stock, peas, salt, and pepper.
Bring to a boil and simmer for 10 minutes.
Blend the soup until consistency desired.
Add mint.
Serve and season with salt and pepper.
