Poached Eggs & Avocado Rye

Fry ups in Ireland are big. They’re great for families or when you’re away with friends to satisfy your morning cravings after staying up a little too late. This alternative to a fry-up is a no fuss! It has no meat and much less grease. If you can get your hands on Dennys meat-free sausages, I would HIGHLY recommend adding them to this healthy fry-up alternative brekky.

Equipment

  • Frying pan
  • Saucepan
  • Mixing bowl

Ingredients
  

Veggies

  • 1 tablespoon olive oil
  • A handful of mushrooms sliced
  • 1 cup of cherry tomatoes
  • 2 peppers sliced

Ryvita, avo eggs

  • 4 Rice cakes or Ryvita crispbreads
  • 2 Avocados
  • 1 tsp chili flakes
  • Salt and pepper to season
  • 4 Eggs
  • 1 teaspoon vinegar

Instructions
 

For poached eggs

  • Crack 1 egg into a saucer or cappuccino cup.
  • Add water, vinegar, and salt to the saucepan and bring to a simmer.
  • Swirl the water in a clockwise motion until whirlpool forms.
  • Lower the saucer with the egg as close to the water as possible, drop it into the middle of the whirlpool.
  • Cook until the white of the egg is set, about 4 minutes.
  • Remove the egg with a draining spoon and set it onto folded kitchen paper.
  • Repeat for the remaining 3 eggs.

For smashed avocado

  • De-Seed and Mash the avocados with a fork or potato masher
  • Squeeze lemon juice and mix
  • Fold in Chili Flakes
  • Season with a generous amount of pepper and salt
  • Smear avocado on Ryvita & add poached eggs

For the veggies

  • Heat olive oil in frying pan on medium-high heat.
  • Add sliced mushrooms and peppers and saute for 5 minutes.
  • Add tomatoes to pan and season with salt and pepper.
  • Char the tomatoes and serve with poached eggs and avocado Ryvita.
