Warming Sweet Potato Soup

Sweet potato has always been one of my favorite starchy vegetables. They’re a brilliant source of fiber and Vitamins A, C, B6 & E.
This hearty soup will warm you right up, it has a nice kick to it with the chili flakes.

- 1 ½ tbsp olive oil
- 1 clove garlic chopped
- 1 yellow onion chopped
- 1 tbsp paprika
- 1 tsp chili
- 2 cups vegetable stock
- 1 large or 4 small sweet potatoes 350g, cubed
- Salt and pepper
Cube sweet potato.
Dice onion and crush garlic.
Heat oil in a saucepan over medium-high heat, add onion and garlic.
When the onion is translucent, add paprika and chili. Saute for 1-2 minutes.
Add vegetable stock and sweet potato.
Cover and simmer for 30 minutes
Blend the soup using a hand blender until consistency desired
Season with salt and pepper
