Warming Sweet Potato Soup

Sweet potato has always been one of my favorite starchy vegetables. They’re a brilliant source of fiber and Vitamins A, C, B6 & E. This hearty soup will warm you right up, it has a nice kick to it with the chili flakes.

  • Hand blender

Ingredients
  

  • 1 ½ tbsp olive oil
  • 1 clove garlic chopped
  • 1 yellow onion chopped
  • 1 tbsp paprika
  • 1 tsp chili
  • 2 cups vegetable stock
  • 1 large or 4 small sweet potatoes 350g, cubed
  • Salt and pepper

Instructions
 

  • Cube sweet potato.
  • Dice onion and crush garlic.
  • Heat oil in a saucepan over medium-high heat, add onion and garlic.
  • When the onion is translucent, add paprika and chili. Saute for 1-2 minutes.
  • Add vegetable stock and sweet potato.
  • Cover and simmer for 30 minutes
  • Blend the soup using a hand blender until consistency desired
  • Season with salt and pepper
